Caraway is an herbaceous plant that is grown for its leaves but primarily for its seeds. The seeds are prized for their aromatic and medicinal qualities. It is a plant that tastes somewhat like fennel, anise and dill.
The freshly picked and chopped leaves are used to flavour certain dishes, such as salads and soups. However, it is the seeds that are most commonly used in the kitchen. They add a strong flavour to meats. They are also used in German cuisine (sauerkraut, pumpernickel bread and goulash). Adding caraway seeds is an excellent way to season vegetables such as potatoes, cabbage, carrots, beets and mushrooms. We also find caraway in the well-known Munster cheese. It is a versatile plant that boosts the flavour of many dishes while also making them more digestible.
Caraway is an antispasmodic agent, a stimulant and most importantly a carminative. It is used in the treatment of bloating, intestinal parasites, loss of appetite, flatulence and dyspepsia.
