Cashews grow on the cashew tree. It comes from a false fruit that we call the cashew apple. The nut contains mono-unsaturated fatty acids, phytosterols and antioxidants. It is also an excellent source of vitamins and minerals, such as magnesium, iron, phosphorus, zinc, copper and manganese. Regular consumption of cashews decreases the risk of cardiovascular disease, type 2 diabetes, gallstones and colon cancer in women.
As well as being healthy and delicious when eaten raw, cashews are versatile. They can be eaten raw, roasted, toasted and salted. They also go well with meat and vegetables. It is common to find them in desserts as well as Asian dishes.
